To celebrate cooking my first meal in the new kitchen I wanted to make a special treat. At least that is my excuse for wanting cookies! This is a paleo recipe I put together based on what I had available. After a long day of cleaning the old place and already being at the grocery store I did not feel like making another trip. I was happy with how these came out, but of course there’s room for improvement. I felt they were a little thick for a cookie and it gave it more of a biscuit texture. Maybe I just made the balls too big. Give these a try, maybe add your own twist and let me know what you think!!
Ingredients:
1 cup coconut flour
1/2 cup Arrow Root Flower
1 tsp baking soda
1/2 cup coconut flakes
4 eggs
1/2 cup Almond Milk
1 tbsp grass-fed butter
1 tsp vanilla extract
1/4 cup chocolate chips (or more if you want!)
How To:
I mixed all the ingredients in the order listed in a bowl. Whisked it with a fork at first to mix it and then used my hands to really mix up the dough.
Poured a little olive oil on a cookie sheet. Rolled the dough into balls and placed on the cookie sheet.
Baked at 375° F for 15-20 minutes. Don’t be alarmed if the cookies don’t flatten out.
Let cool for about 5 minutes, Enjoy! 🙂
