On Today’s episode of “Secretly turning my roommates healthy” (only half kidding about that title) we have PIZZA!!!
I had to break the news to Chris that on paleo, normal cheese is not allowed so I was substituting with Nut Cheese and he still agreed to try it!! Already a win in my book!
You have to admit, it does look pretty tasty!
So, what’s in it?
- 1 cup Almond Flour
- 1/2 cup Coconut Flour
- 1 tsp Baking Powder
- 2 tsp garlic powder
- 1/2 cup Coconut Milk
- 4 eggs
- 3 tbsp olive oil (extra-virgin)
Mixed all the ingredients in a bowl until it was a doughy mixture. This is where I need to tweak the recipe a bit, I felt it didn’t get a doughy enough texture. I might try adding butter next time, if you try something different let me know what works for you!
I baked that at 375 for about 20 minutes. While that was baking I cooked the bacon and mushrooms for toppings.
Cute bacon into bite size pieces and cooked in coconut oil in the frying pan for a few minutes. Then added the mushrooms.
Once the crust was cooked, I used Nut Cheese (yes you read that right, nut cheese, made from cashews! I found it in the nature’s market section at Wegmans). I spread on the nut cheese and then added the bacon bites and mushrooms, oh and a half of diced tomato that I had left over.
Put back in the oven, still at 375, for 10 minutes.
